Happy 2010!

I’m a bit late on this post, but happy 2010 to everyone out there, we are really excited that it is the new year and hope that 2010 brings bigger and better things for our family and everyone else out there.  The last half of 2009 was a bit tough for us.  We have been busy regrouping and relearning how to cook and eat within new restrictions of being gluten free as well as dairy, egg, nut, peanut, fish, and shellfish free.  This has taken far more time than we initially expected but we are slowly but surely getting the hang of things.  The hardest part for us has been detecting hidden gluten in things you don’t expect, and not being able to eat out.

I have been learning how to bake, something I didn’t really do much of before, and have found some great gluten free vegan cookbooks to help me out.  Earlier this week I made blueberry cinnamon scones that were delicious (even for normal food) and hot out of the oven.  In some ways I think we are even eating better than we were prior to our problems;  Jeremy and Jacob never got fresh and piping hot baked goods before all of this.   Unfortunately, thanks to all of the time spent lately on our food issues we have let other things slide and have not been as diligent about becoming green or blogging about it.

We hope that 2010 will be a great year with our family feeling healthy and happy.  One of our New Year’s resolutions this year is to continue on the path we started last year of becoming green.  We’re planning on blogging at least twice a week tentatively on Tuesdays and Fridays.  You will probably notice, going forward, the recipes I post on this blog will be free of gluten and most major allergens, but hopefully still delicious.   Maybe even some of you without our issues will try them and let us know how you like them.
