I agree with you, it doesn't seem like too big of a deal in Colorado either, and is at least something we can avoid easily. Avoiding dairy and eggs is much harder especially at restaurants so those are the ones I am really hoping he outgrows! I've known several people that are allergic to shellfish, and it doesn't seem to be a big problem (especially in OK!), and they can even eat most sushi since a lot of it is made with imitation crab.
